Banana Bread - 2 Ways

Today my friend Erin asked me for some help, so I turned to my friend Zach, who had told me about his awesome Banana Bread recipe before - so here are two ways to do Banana Bread - Zach's Peanut Butter Banana Bread, and Classic Banana Bread, straight out of Grandma Upham's recipe box 💕

Zach's Peanut Butter Banana Bread

What you need
3-4 overripe Bananas, mashed
1/3 C Butter, melted
1 Egg
1 C Granulated Sugar
1/2 t Vanilla Extract
2 T Sour Cream
1 t baking soda
1/4 C Peanut Butter
1/4 Chopped nuts (Pecans or Walnuts - Optional)
Cinnamon (Dash)
Allspice (Dash)
Salt (Dash)
1 1/2 C Flour

Preheat oven to 350 F.

Mix the mashed Bananas, melted Butter, and Egg until well blended.

Add the Sugar, Vanilla, Sour Cream, Baking Soda, Peanut Butter, Chopped Nuts, Cinnamon, Allspice, and Salt, and mix well.

Mix in the Flour, 1/4 C at a time.

Pour into a greased loaf pan.  Bake at 350F for an hour.  Check the loaf at 45 minutes - if a toothpick inserted in the center comes out clean, it is done.  Let cool for about 10 minutes before removing from pan, and allow to cool.


Classic Banana Bread, Reba Upham

What you need
1 C Granulated Sugar
2 T Vegetable Oil
1 Egg
3/4 C Milk
1 overripe Banana, mashed
3 C Flour
1 T Baking Powder
1 t Salt
3/4 C Chopped Nuts (Pecans or Walnuts - Optional)

Mix the Sugar, Oil, and Egg until well combined.

Add the Milk and mashed Banana.

Gradually mix in the Flour, Baking Powder, and Salt.

Pour into greased loaf pan.  Let rest for 20 minutes before baking.

Preheat oven to 350 F.

Bake at 350F for an hour.  Check the loaf at 45 minutes - if a toothpick inserted in the center comes out clean, it is done.  Let cool for about 10 minutes before removing from pan, and allow to cool.
