Sweet Distraction

Need a little sweetness in your life?  Got "a lot going on", right about now?  Yeah, you do.  We deserve something a little special - so I'll share a handful of my favorite quick-fix desserts.  Enjoy!


Warm Chocolate Cake with Ice Cream and Hot Fudge Sauce
Yes, you could get this at Applebee's.  Or really any chain restaurant.  But if you keep a few key ingredients on hand, you can have this anytime - and probably a more reasonable (smaller) portion, too!  Which means you can have it more often, am I right?

What you need
Chocolate Cake
Vanilla Ice Cream
Hot Fudge Sauce

How you can make this an "anytime" delight
Make a chocolate cake from a mix. I like the Duncan Hines Dark Chocolate Fudge cake the best, so I usually have that on hand.  You know, just in case.  Make the cake batter according to the instructions on the box, and bake as cupcakes.
Once they are cooled, store them in an airtight container, and freeze.

When you want some...
Warm up a bit of the hot fudge sauce in a small saucepan, or in a small bowl in the microwave.
Wrap a cupcake in a paper towel and microwave it on high for 25 seconds.  Put it in a bowl, scoop on some ice cream, and top with hot fudge sauce.  If you have whipped cream, cool whip, chocolate chips, nuts (if that's how you roll?), go for it!

You can do this with any combination of cake, ice cream, and topping you can dream of.  How about yellow cake with vanilla ice cream and caramel sauce? Or peanut butter?  Or BOTH! Or lemon cake and sherbet or ice cream, and some warmed up raspberry jam?  This dessert is all about the different textures, temperatures, and flavors, and I think there are endless combinations to try.  By keeping the portions controlled - by making cupcakes instead of a large, single cake - you could make a dessert buffet of various toppings, so everyone in your family can enjoy their favorite flavors.


Lazy Peach Cobbler

This is decadent, easy, and the only fresh ingredients you need are milk and butter.

What you need
Large can of sliced peaches in heavy syrup (I told you, this is not a health-food blog!)
1/2 C butter (see?)
1 1/2 C Bisquick
1/2 C Granulated Sugar
2/3 C Milk

Preheat your oven to 350F

Line a baking sheet with foil.  Place a greased pie dish (I use glass, but you can use whatever you have) in the center of the foil-lined baking sheet.  The baking sheet will catch any overspill in the oven.

In a medium saucepan, empty the entire can of peaches and syrup, and add the stick of butter.  Over medium heat, cook the peaches and butter until the butter just melts.

In a small bowl, combine the Bisquick, sugar, and milk until mixed.  Spread the batter into the greased pie dish.

Using a slotted spoon, gently spoon the peaches on top of the batter.  Once all of the peaches are out, carefully pour the buttery syrup over the peaches and batter.  This dish will rise a bit, but you can pour the syrup almost right to the top of the pie pan - as this bakes, the batter part gets cake-like, and sort of floats atop the buttery, syrupy peaches, so overspill isn't likely.

Bake at 350F for 45 mins - the top will be golden brown, and the syrup will be bubbly.  Let it sit for a bit before serving, and be careful, it stays hot for a long time.  It's delicious served warm, and you could add ice cream. if you like - butter pecan or good ol' vanilla are perfect!  It keeps well in the fridge, too - just cover the pie pan with plastic wrap.  

You can reheat single servings in the microwave - spoon a portion into a microwave-safe bowl, and cover the bowl with plastic wrap (take care not to let the film touch the food, or it will melt in the microwave).  Microwave for 1 minute on 50% power, check it, and repeat until heated to your desired temp.
